Do enameled Dutch ovens need seasoning
Published
Short answer
No. Enameled cast iron Dutch ovens, including Le Creuset and Staub, come ready to use and do not need seasoning. The enamel is a glass coating fused to the iron, so oil does not bond to it the way it does to bare cast iron. The one exception is the exposed iron rim on the pot and lid, which can rust if left wet, so dry it well and wipe it with a little oil now and then.

This page is for new owners of an enameled Dutch oven who have heard that cast iron needs seasoning and are not sure whether that applies. It explains what enamel is and why it needs no seasoning, what the black matte interior on Staub pots is, the bare iron rim that does need some care, and what oiling the pot does and does not do. It also covers how enameled and bare cast iron differ in daily care, since they are often confused.
Why enamel needs no seasoning
Enamel is a layer of glass fused to the cast iron at high temperature. It seals the iron away from air and water, so it does not rust, and it does not react with acidic foods like tomatoes or wine. Le Creuset's own listings describe its enameled cast iron as ready to use and requiring no seasoning.
Seasoning on bare cast iron is oil baked into a hard layer bonded to the iron. That process needs bare metal. On glass enamel, oil just sits on the surface and washes off, so there is nothing to build. See enameled vs bare cast iron for a full comparison.
Light enamel vs black matte enamel
Le Creuset's classic interior is a smooth, light sand-colored enamel. It is easy to see food browning against it, and it does not build seasoning at all.
Staub and some Le Creuset lines use a black matte enamel interior. It is still enamel and still needs no seasoning, but its slightly textured surface can pick up a thin layer of cooked-on fat over time that helps browning and release. Some owners describe this as the pot becoming seasoned. It is a by-product of cooking with fat, not something you have to do. Compare the brands in Staub vs Le Creuset.
The exposed rim: the part that does need care
On many enameled Dutch ovens, the top edge of the pot and the edge of the lid where they meet are left as bare or matte black cast iron. These edges are not glazed so the lid can sit flat. Because they are iron, they can rust if left wet, especially after a soak or a dishwasher cycle.
Rust here is usually light surface rust and easy to deal with. It does not mean the pot is ruined.
- 1
After washing, dry the pot and lid thoroughly, paying attention to the rim and lid edge.
- 2
Every so often, rub a drop of cooking oil onto the rim and lid edge with a paper towel.
- 3
If you see light rust, scrub it gently with a nylon brush, wipe clean, dry and oil it.
- 4
Store with the lid slightly ajar or a cloth between pot and lid so moisture can escape.
Note.Heavier rust inside a pot usually means the enamel is chipped. See the chipped enamel and rusty Dutch oven pages before cooking in it.
Should you oil an enameled Dutch oven
You do not need to oil the enamel interior before or after cooking. Cook with enough fat for what you are making, as you would in any pan, and preheat gradually on low to medium heat. Food releases from enamel when the pot and fat are hot enough and you let the food brown before moving it.
Oiling only matters on the bare iron rim, as above. Coating the whole interior with oil and baking it, as you would for bare cast iron, can leave a sticky film on enamel that is hard to remove. If that has happened, see how to clean a Le Creuset.

Buying a pot with the least upkeep
If low maintenance is the main goal, enameled cast iron is the easiest Dutch oven to live with. A light interior makes browning easy to judge, and a black matte interior hides stains better. The best Dutch oven guide, the Le Creuset Dutch oven guide and the Staub guide cover options. For oven use, check the knob: older Le Creuset black phenolic knobs are rated to 390F, while Staub cocottes are rated to 500F on the maker's page.
Frequently asked questions
Do I need to season my new Le Creuset? No. Wash it in warm soapy water, dry it and start cooking. It comes ready to use.
Does Staub need seasoning? No. The black matte interior is enamel. It may pick up a thin layer from cooking with fat, but you do not need to season it.
Why is the rim of my Dutch oven rusting? The rim is often bare cast iron. Dry it well after washing and wipe a little oil on it now and then.
Can I use acidic foods in an enameled Dutch oven? Yes. Enamel does not react with tomatoes, wine or vinegar, unlike bare cast iron.
